There are a number of reasons that a prisoner might be tempted to run a business behind bars. One is the obvious: money. However, some prisons don’t allow business to go on behind bars. A report in the Dallas Morning News reveals that chef Casey La Rue, owner of the Lowest Greenville restaurant Carte Blanche, falsified his fine dining credentials. The restaurateur is now attempting to clear his name. Here are a few things to watch for.

Carte Blanche focuses on serving only wild-caught proteins. The restaurant only serves farm-raised duck breast, and wild-caught fish and seafood. Casey was in the catering business before opening her own restaurant. Even the simplest dishes at Carte Blanche have an air of catered luxury. For example, phyllo crackers filled with monkfish liver are presented on a plate with bright green gazpacho. A dessert called caramel apple mousse is also served. Casey’s other dishes include tempura broccoli florets.

Amy La Rue

In June, Amy La Rue opened a tasting menu restaurant called Carte Blanche in Dallas. She also runs a bakery. The business combines her mother’s love of fine dining and her own experience as a Ritz-Carlton executive chef. The result is a menu that is both creative and delicious.

The Morning News published an article about La Rue’s work history and purported LinkedIn profile. The article cited La Rue’s first name, “John,” but he had also used an alternate name. He also claimed to be a stager at various restaurants, which is like an unpaid working interview.

Dawie de Villiers

His culinary experience began at a Michelin-starred restaurant in New York, and he also worked at the Robuchon and Clio in Boston. He met his wife Amy La Rue while working at a bakery.

La Rue’s lawyer, Heath Cheek, has defended his client in the Morning News’ reporting, pointing to email correspondence and emails showing that he worked at the restaurants under an alternate name. La Rue declined to provide proof of employment at the restaurants, so there is no way to verify this claim.
